- 1 1/2 pounds carrots, peeled and cut into sticks
- 2 tablespoons unsalted butter, melted
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme or chopped fresh thyme
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, whisk together melted butter, honey, olive oil, salt, pepper, and thyme.
- Add the carrots to the bowl and toss until evenly coated with the honey butter mixture.
- Spread the carrots out in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, turning halfway through, until carrots are tender and caramelized.
- Remove from oven, garnish with chopped parsley, and serve warm.
Notes
- Use rainbow carrots for a colorful presentation.
- Adjust honey to taste for more or less sweetness.
- Drizzle with balsamic glaze before serving for a gourmet touch.
