Description

Gourmet Honey Butter Roasted Carrots are tender, caramelized carrots glazed with a rich mixture of honey and butter, perfect as an elegant side dish.


Ingredients

  • 1 1/2 pounds carrots, peeled and cut into sticks
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme or chopped fresh thyme
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, whisk together melted butter, honey, olive oil, salt, pepper, and thyme.
  3. Add the carrots to the bowl and toss until evenly coated with the honey butter mixture.
  4. Spread the carrots out in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, turning halfway through, until carrots are tender and caramelized.
  6. Remove from oven, garnish with chopped parsley, and serve warm.

Notes

  • Use rainbow carrots for a colorful presentation.
  • Adjust honey to taste for more or less sweetness.
