- 4 oz goat cheese, softened
- 2 tsp honey
- 1/4 tsp crushed red pepper flakes (adjust to taste)
- 2 tbsp butter, softened

Instructions
- In a small bowl, mix the goat cheese, honey, and red pepper flakes until well combined.
- Spread the goat cheese mixture evenly on two slices of bread.
- Top with optional fresh thyme or arugula if using, then close sandwiches with remaining bread slices.
- Spread butter on the outsides of each sandwich.
- Heat a skillet or griddle over medium heat.
- Cook sandwiches for 3-4 minutes per side, or until golden brown and cheese is warm and softened.
- Remove from skillet, slice in half, and serve immediately.
