Description

A gourmet twist on the classic grilled cheese, this version features tangy goat cheese paired with sweet honey and a hint of spice, all toasted between crispy golden bread slices.

Ingredients

Units Scale
  • 4 slices of sourdough or rustic bread
  • 4 oz goat cheese, softened
  • 2 tsp honey
  • 1/4 tsp crushed red pepper flakes (adjust to taste)
  • 2 tbsp butter, softened
  • Optional: fresh thyme or arugula for added flavor

Instructions

  1. In a small bowl, mix the goat cheese, honey, and red pepper flakes until well combined.
  2. Spread the goat cheese mixture evenly on two slices of bread.
  3. Top with optional fresh thyme or arugula if using, then close sandwiches with remaining bread slices.
  4. Spread butter on the outsides of each sandwich.
  5. Heat a skillet or griddle over medium heat.
  6. Cook sandwiches for 3-4 minutes per side, or until golden brown and cheese is warm and softened.
  7. Remove from skillet, slice in half, and serve immediately.

Notes

  • Try drizzling extra honey on top for a sweeter finish.
  • Pair with tomato soup or a green salad for a complete meal.
  • Use multigrain or ciabatta bread for variation.
