- 6 cloves garlic, minced

- 1 teaspoon ground cumin
- 1 teaspoon sweet paprika
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 large tomato, finely chopped
- 1/2 cup water or fish stock
- 1 tablespoon tomato paste
- Juice of 1 lemon
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a large skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
- Add the cumin, paprika, turmeric, and cayenne pepper and cook for another 30 seconds.
- Stir in the chopped tomato and cook until softened, about 3-4 minutes.
- Add the tomato paste and water or stock, stirring to combine, and bring to a simmer.
- Season the fish fillets with salt and pepper, then place them gently into the sauce.
- Cover and cook for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Drizzle lemon juice over the fish and sprinkle with chopped cilantro.
- Serve hot with lemon wedges on the side.
