Description

This Garlic Mushrooms Cauliflower Skillet is a flavorful and healthy vegetable stir-fry that combines tender cauliflower florets sautéed with savory mushrooms, fragrant garlic, and a hint of thyme. It’s a low-carb, gluten-free, and vegetarian-friendly dish perfect as a hearty side or a main for light meals, finished with optional Parmesan and fresh parsley for an extra burst of flavor.

Ingredients

Scale

Vegetables

  • 1 medium head cauliflower (cut into small florets)
  • 8 oz cremini or button mushrooms (sliced)
  • 4 garlic cloves (minced)

Fats & Oils

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter

Seasonings & Garnishes

  • 1/2 teaspoon dried thyme or Italian seasoning
  • Salt and black pepper to taste
  • 2 tablespoons grated Parmesan cheese (optional)
  • Chopped parsley for garnish

Instructions

  1. Heat fat and sauté cauliflower: Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the cauliflower florets and sauté for 8 to 10 minutes, stirring occasionally, until the cauliflower is golden and slightly tender.
  2. Cook mushrooms: Push the cauliflower to one side of the skillet. Add the remaining 2 tablespoons of butter and the sliced mushrooms to the empty side. Cook the mushrooms for 5 to 6 minutes until they release moisture and start to brown.
  3. Add garlic and seasoning: Add the minced garlic and dried thyme (or Italian seasoning) to the skillet. Stir everything together to combine the flavors thoroughly.
  4. Finish cooking: Continue to cook for another 2 to 3 minutes until the cauliflower is fully tender and the garlic is fragrant. Season the mixture with salt and black pepper to taste.
  5. Garnish and serve: Remove the skillet from heat and sprinkle the dish with grated Parmesan cheese, if using, and chopped parsley before serving for a fresh final touch.

Notes

  • This dish works well as a hearty vegetarian main or as a flavorful side with grilled chicken or steak.
  • For a dairy-free version, substitute all butter with olive oil and omit the Parmesan cheese.
  • Use fresh herbs like thyme if available for a lighter, fresher flavor.
  • You can customize by adding chili flakes for a spicy touch or lemon zest for brightness.
