Creamy Parmesan Pasta

  • 8 oz (225 g) fettuccine or spaghetti
  • 1 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/4 tsp ground nutmeg (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Prepare the Steak Bites: Heat olive oil in a skillet over medium-high heat and season steak cubes with salt, pepper, and smoked paprika if using.
  3. Sear the Steak: Add steak cubes to the hot skillet and sear for 2-3 minutes per side until golden brown and cooked to your desired doneness. Remove from skillet and set aside.
  4. Make the Garlic Butter: In the same skillet, stir in 2 tbsp of unsalted butter and the minced garlic. Sauté for 1 minute until fragrant.
  5. Toss Steak in Garlic Butter: Return the steak bites to the skillet and toss them in the garlic butter to coat well. Remove from heat and set aside.
  6. Make the Parmesan Sauce: In the skillet, add 1 tbsp unsalted butter and minced garlic. Sauté for 1 minute. Stir in heavy cream and bring to a gentle simmer.
