For the Cheesy Smashed Potatoes:

  • 1 ½ pounds baby Yukon gold or red potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped chives or parsley (for garnish)


Instructions

  1. Make the Potatoes: Preheat the oven to 425°F (220°C). Boil the baby potatoes in salted water for 15–20 minutes or until fork-tender. Drain the potatoes and let them cool slightly. Place the potatoes on a greased baking sheet and gently flatten each with the bottom of a glass or measuring cup. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 15–20 minutes, until the edges are golden and crispy. Remove from the oven, sprinkle the potatoes with shredded cheddar and grated Parmesan cheese, and return to the oven for an additional 5 minutes, or until the cheese is melted. Garnish with chopped chives or parsley.
  2. Make the Steak Bites: While the potatoes are roasting, season the steak cubes generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the steak bites in batches for 2–3 minutes per side until browned and cooked to your preferred doneness. Remove the steak bites from the pan and set aside. Reduce the heat to medium and add the butter and minced garlic to the skillet, sautéing for about 1 minute until fragrant. Return the steak bites to the skillet and toss them in the garlic butter to coat evenly. Garnish with chopped fresh parsley if desired.
  3. Serve: Serve the garlic butter steak bites hot alongside the cheesy smashed potatoes for a delicious, comforting meal.
