Ingredients

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

2 tablespoons olive oil

3 tablespoons unsalted butter

4 garlic cloves, minced

1 teaspoon fresh thyme (or 1/2 tsp dried)

1 teaspoon fresh rosemary (or 1/2 tsp dried)

Salt, to taste

Black pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Cook the potatoes:
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the halved baby potatoes, cut side down. Season with salt and pepper. Cook for 10–12 minutes, stirring occasionally, until golden and tender. Remove from skillet and set aside. -
Sear the steak:
In the same skillet, add another tablespoon of olive oil. Add steak pieces in a single layer. Season with salt and pepper. Sear for 2–3 minutes per side until browned and cooked to your liking. Remove from skillet and set aside. -
Make garlic butter:
Reduce heat to low. In the same skillet, melt the butter. Add the minced garlic, thyme, and rosemary. Cook for about 1 minute until fragrant. -
Combine:
Return the cooked potatoes and steak to the skillet. Toss everything to coat in the garlic butter sauce. Let it cook for another 2–3 minutes to heat through.

Garnish with chopped fresh parsley and serve hot.
