For the Beef Bites:

  • 1 1/2 pounds sirloin steak, cut into 1-inch cubes
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme or rosemary, chopped
  • 1 tablespoon chopped parsley, for garnish (optional)

For the Mashed Potatoes:

  • 2 pounds Yukon Gold or russet potatoes, peeled and cubed
  • 1/2 cup whole milk, warmed
  • 1/4 cup sour cream
  • 3 tablespoons butter
  • Salt and black pepper, to taste


Instructions

  1. Make the Mashed Potatoes: Place the cubed potatoes in a large pot and cover with cold salted water. Bring to a boil, then reduce heat and simmer for 15–18 minutes or until fork-tender. Drain and return to the pot. Add warm milk, sour cream, and butter. Mash until smooth and creamy. Season with salt and pepper. Cover to keep warm.
  2. Prepare the Beef Bites: Pat steak cubes dry with paper towels and season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear steak bites in a single layer (in batches if needed) for 1–2 minutes per side until browned. Remove from skillet and set aside. Reduce heat to medium, add butter to the pan. Once melted, stir in garlic and herbs and cook for 30 seconds until fragrant. Return beef to the skillet and toss to coat in garlic butter. Cook for another 1–2 minutes to warm through.
  3. To Serve: Spoon mashed potatoes onto plates and top with garlic butter beef bites. Drizzle extra garlic butter from the pan over the top. Garnish with parsley if desired.
