Ingredients
- 1 lb (450 g) beef sirloin, cut into bite-sized pieces
- 1 lb (450 g) baby potatoes, halved
- 4 tbsp (60 g) unsalted butter
- 4 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp paprika
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400 °F (200 °C).
- Toss halved baby potatoes with olive oil, paprika, salt, and pepper; spread on baking sheet.
- Roast potatoes for 20–25 minutes until golden and tender.
- While potatoes roast, melt 2 tbsp butter in skillet over medium-high heat.
- Add beef bites, season with salt and pepper, and sear 2–3 minutes per side until browned but still juicy; remove and set aside.
- In same skillet, add remaining 2 tbsp butter and garlic; cook 1–2 minutes until fragrant.
- Return beef to skillet; toss to coat in garlic butter sauce.
- Remove roasted potatoes from oven; add to skillet and toss with beef and sauce.
- Sprinkle with fresh parsley before serving.
Notes
- Choose firm baby potatoes so they hold shape when roasting.
- Sirloin is tender and flavorful—alternatively use ribeye or flank steak.
- For extra heat, add a pinch of red pepper flakes with the garlic.
- Can swap parsley for cilantro or chives.
