Ingredients
Scale
Yogurt Mixture
- 2 cups Greek yogurt (plain or flavored)
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
Fruit and Toppings
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup granola
Instructions
- Prepare workspace: Gather mixing bowls, a spatula, and a baking sheet lined with parchment paper to ensure a smooth preparation process.
- Mix yogurt base: In a medium bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Stir until the mixture is smooth and fully blended.
- Add berries: Gently fold the mixed berries into the yogurt mixture to evenly distribute the fruit without breaking them down.
- Spread mixture: Pour and spread the yogurt and berry mixture evenly onto the prepared baking sheet to about half an inch thickness, creating a flat surface for freezing.
- Add granola topping: Sprinkle the granola evenly over the top of the yogurt layer for added texture and crunch.
- Freeze: Place the baking sheet in the freezer and let it freeze for at least 4 hours or until completely firm to achieve the bark consistency.
- Serve: When frozen solid, remove from freezer and allow to sit for a few minutes to soften slightly before cutting into pieces for serving.
Notes
- For best results, use full-fat Greek yogurt for creaminess.
- You can swap mixed berries for any favorite fruit like kiwi or mango.
- Maple syrup is a great vegan substitute for honey.
- Store leftover bark in an airtight container in the freezer.
- Cut the bark with a sharp knife to avoid cracking.
