- 1 9-inch pie crust, baked and cooled
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 cup water
- 1 (3 oz) package strawberry gelatin (such as Jell-O)
- 4 cups fresh strawberries, hulled and halved
- Whipped cream for topping (optional)
Instructions
- In a saucepan, combine sugar and cornstarch. Gradually add water and stir until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and becomes translucent.
- Remove from heat and stir in strawberry gelatin until completely dissolved. Let cool to room temperature.
- Arrange fresh strawberries in the baked pie crust.
- Pour the cooled gelatin mixture evenly over the strawberries.
- Refrigerate the pie for at least 4 hours or until set.
- Top with whipped cream before serving, if desired.
Notes
- Use ripe, sweet strawberries for the best flavor.
- You can make the pie a day in advance and refrigerate overnight.
