Description

A light and refreshing soup made with fresh peas, perfect for spring and summer meals. It’s creamy, flavorful, and packed with nutrients.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh or frozen peas
  • 4 cups vegetable broth
  • 1/2 cup fresh mint leaves
  • 1/2 cup heavy cream (optional)
  • Salt and pepper to taste
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic; sauté until soft and translucent, about 5 minutes.
  3. Add peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Stir in mint leaves and cook for an additional 2 minutes.
  5. Remove from heat and use an immersion blender or regular blender to puree the soup until smooth.
  6. Stir in heavy cream if using, and season with salt, pepper, and lemon juice.
  7. Reheat gently if needed and serve warm.

Notes

  • For a vegan version, omit the cream or use a plant-based alternative.
  • Fresh mint adds brightness, but you can substitute with basil or parsley.
  • Serve with crusty bread or a side salad for a complete meal.
