A refreshing and colorful salad made with black beans, corn, fresh vegetables, and a tangy lime dressing. Perfect as a side dish or light meal.
Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine black beans, corn, red bell pepper, and red onion.
- Add the diced avocado and chopped cilantro.
- In a small bowl, whisk together olive oil, lime juice, ground cumin, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
Notes
- Use fresh corn if in season by grilling or boiling and cutting off the kernels.
- For extra heat, add diced jalapeño or a pinch of chili flakes.
- Best served cold and consumed within 1-2 days for optimal freshness.
