- 3 cups cooked and chilled jasmine or long-grain rice
- 2 eggs, lightly beaten
Vegetables and Aromatics
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, sliced (white and green parts separated)
- 2 cloves garlic, minced
Oils and Sauces
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
Seasoning
- Salt and pepper to taste
Instructions
- Scramble Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble until just set. Transfer the cooked eggs to a plate and set aside.
- Sauté Aromatics and Vegetables: Add the remaining tablespoon of oil to the same skillet. Sauté the white parts of the green onions and minced garlic for about 30 seconds until fragrant. Add the mixed vegetables and cook for 2 to 3 minutes until they are heated through.
- Stir-Fry Rice: Increase the heat to high and add the chilled cooked rice to the skillet. Stir-fry for 3 to 5 minutes, breaking up any clumps, until the rice is hot and develops a slightly crisp texture.
- Add Sauces and Eggs: Stir in the soy sauce, oyster sauce (if using), and sesame oil. Return the scrambled eggs to the skillet and mix everything together thoroughly. Season with salt and pepper to taste.
- Finish and Serve: Remove the skillet from the heat. Garnish with the green parts of the sliced green onions and serve the fried rice hot.
