Description

These fluffy protein pancakes are made without protein powder, using wholesome ingredients like eggs and Greek yogurt for a naturally high-protein breakfast. Perfect for a healthy start to your day!

Ingredients

  • 2 large eggs
  • 1/2 cup Greek yogurt (plain, unsweetened)
  • 1/2 cup rolled oats
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon (optional)
  • Pinch of salt
  • 12 tbsp milk (optional, for consistency)
  • Butter or oil for cooking

Instructions

  1. Place the eggs, Greek yogurt, rolled oats, baking powder, baking soda, vanilla extract, cinnamon, and salt into a blender.
  2. Blend until smooth and let the batter rest for 5 minutes to thicken slightly. Add 1–2 tbsp of milk if batter is too thick.
  3. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  4. Pour small rounds of batter onto the skillet and cook for 2–3 minutes, until bubbles form on the surface.
  5. Flip the pancakes and cook for another 1–2 minutes until golden and cooked through.
  6. Serve warm with your favorite toppings like fruit, nut butter, or maple syrup.

Notes

  • Use certified gluten-free oats for a gluten-free option.
  • Add mashed banana or blueberries to the batter for extra flavor.
  • These pancakes can be stored in the fridge for up to 3 days or frozen for up to a month.
