- 1 cup mashed potatoes (about 1 large potato)
- 1 cup warm milk
- 1/2 cup unsalted butter, melted
- 1/2 cup sugar
- 2 1/4 teaspoons active dry yeast (1 packet)
- 2 large eggs
- 5 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 tablespoon butter (for brushing, optional)
Instructions
- In a large bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes until foamy.
- Mix in mashed potatoes, melted butter, and eggs until well combined.
- Gradually add flour and salt, mixing to form a soft dough.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
- Punch down the dough and divide into 24 equal pieces. Shape into rolls and place on a greased baking sheet.
- Cover rolls and let rise again for 30-45 minutes until puffy.
- Preheat oven to 375°F (190°C).
- Bake rolls for 15-18 minutes or until golden brown.
- Brush with melted butter if desired and let cool slightly before serving.
Notes
- Make sure the milk is warm but not hot to avoid killing the yeast.
- You can prepare the dough a day ahead and refrigerate overnight for convenience.
- For extra flavor, add a sprinkle of garlic powder or herbs to the dough.
