Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon sugar
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 3/4 cup buttermilk, cold
- 2 tablespoons melted butter (for brushing)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
- Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Make a well in the center and pour in the cold buttermilk. Stir just until combined; do not overmix.
- Turn the dough onto a lightly floured surface and gently pat it into a 1-inch thick rectangle.
- Fold the dough over itself 2-3 times to create layers, then pat it down again to about 1-inch thickness.
- Use a biscuit cutter or a round glass to cut out biscuits. Place them on the prepared baking sheet, close together for softer sides or spaced apart for crispier edges.
- Bake for 12-15 minutes or until the tops are golden brown.
- Remove from oven and brush the tops with melted butter. Serve warm.
Notes
- Keep the butter and buttermilk as cold as possible for the flakiest biscuits.
- Do not overwork the dough to avoid tough biscuits.
- You can freeze cut-out unbaked biscuits and bake directly from frozen, adding a few extra minutes to baking time.
