Description
A refreshing summer salad combining the sweetness of watermelon with the tanginess of feta cheese, perfect for hot days.
Ingredients
- 4 cups watermelon, cubed
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the watermelon cubes and crumbled feta cheese.
- Add the chopped mint leaves and gently toss to mix.
- Drizzle with olive oil and season with salt and black pepper.
- Gently toss again to combine all ingredients evenly.
- If using, drizzle with balsamic glaze just before serving.
- Serve immediately or chill in the fridge for 15–20 minutes before serving.
Notes
- Use chilled watermelon for an extra refreshing salad.
- Adjust the amount of mint and feta to taste.
- Add a splash of lime juice for extra zing.
