Description

A refreshing summer salad combining the sweetness of watermelon with the tanginess of feta cheese, perfect for hot days.


Ingredients

  • 4 cups watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a large bowl, combine the watermelon cubes and crumbled feta cheese.
  2. Add the chopped mint leaves and gently toss to mix.
  3. Drizzle with olive oil and season with salt and black pepper.
  4. Gently toss again to combine all ingredients evenly.
  5. If using, drizzle with balsamic glaze just before serving.
  6. Serve immediately or chill in the fridge for 15–20 minutes before serving.

Notes

  • Use chilled watermelon for an extra refreshing salad.
  • Adjust the amount of mint and feta to taste.
  • Add a splash of lime juice for extra zing.
