- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1 teaspoon chili powder
- 1 tablespoon fresh cilantro, chopped
- 1 lime, cut into wedges
- Salt, to taste
Instructions
- Preheat a grill to medium-high heat.
- Grill the corn, turning occasionally, until charred and cooked through, about 7-10 minutes.
- In a small bowl, mix the mayonnaise and sour cream together.
- Brush the mixture all over the grilled corn.
- Sprinkle the corn generously with cotija cheese.
- Dust with chili powder and sprinkle with chopped cilantro.
- Serve with lime wedges and a sprinkle of salt to taste.
Notes
- Use feta cheese if cotija is unavailable.
- Add a dash of smoked paprika for extra flavor.
- You can also use Mexican crema instead of sour cream.
