Description

Elote is a popular Mexican street food featuring grilled corn on the cob slathered in a creamy, cheesy, and spicy topping.


Ingredients

  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 tablespoon fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Salt, to taste

Instructions

  1. Preheat a grill to medium-high heat.
  2. Grill the corn, turning occasionally, until charred and cooked through, about 7-10 minutes.
  3. In a small bowl, mix the mayonnaise and sour cream together.
  4. Brush the mixture all over the grilled corn.
  5. Sprinkle the corn generously with cotija cheese.
  6. Dust with chili powder and sprinkle with chopped cilantro.
  7. Serve with lime wedges and a sprinkle of salt to taste.

Notes

  • Use feta cheese if cotija is unavailable.
  • Add a dash of smoked paprika for extra flavor.
  • You can also use Mexican crema instead of sour cream.
