Description

Egg Roll in a Bowl is a low-carb, one-pan meal that captures all the flavors of a traditional egg roll without the wrapper. It’s quick, flavorful, and perfect for busy weeknights.


Ingredients

  • 1 lb ground pork
  • 1 tablespoon sesame oil
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (14 oz) bag coleslaw mix
  • 1/4 cup low-sodium soy sauce (or coconut aminos)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional)
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (optional)


Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add ground pork and cook until browned, breaking it apart as it cooks.
  3. Add diced onion, garlic, and ginger; sauté for 2–3 minutes until fragrant.
  4. Stir in coleslaw mix and cook for about 5–7 minutes, until vegetables are tender.
  5. Add soy sauce, rice vinegar, and sriracha (if using); stir well to combine.
  6. Cook for another 2–3 minutes to let flavors meld.
  7. Top with sliced green onions and sesame seeds before serving.

Notes

  • You can substitute ground turkey or chicken for pork.
  • For a keto version, use coconut aminos instead of soy sauce.
  • Add more sriracha if you prefer a spicier dish.
