Romesco Sauce Ingredients

  • 1 (16-ounce) jar roasted red peppers, drained
  • ½ cup raw or roasted unsalted almonds
  • ¼ cup oil-packed sun-dried tomatoes, rinsed and drained
  • 2 medium-to-large cloves garlic, peeled and quartered
  • 1 tablespoon sherry vinegar or red wine vinegar
  • 1 teaspoon smoked paprika
  • ½ teaspoon fine sea salt (to taste)
  • ¼ teaspoon cayenne pepper
  • ½ cup extra-virgin olive oil


Instructions

  1. Combine Ingredients: In a blender or food processor, add the drained roasted red peppers, almonds, rinsed and drained sun-dried tomatoes, quartered garlic cloves, vinegar, smoked paprika, sea salt, and cayenne pepper.
  2. Initial Blend: Pulse or blend on low speed, gradually increasing as needed, until the mixture is mostly combined but still slightly coarse.
  3. Incorporate Olive Oil: With the blender running on low, slowly drizzle in the extra-virgin olive oil to emulsify the sauce. Continue blending until the desired consistency is achieved—either smooth or with some texture according to your preference.
  4. Adjust Seasoning: Taste the sauce and add more salt if necessary to enhance the flavors.
  5. Serve or Store: Transfer the Romesco sauce to a serving dish and use immediately, or preserve it in a sealed jar in the refrigerator for up to 7 to 10 days.

Notes

  • Use raw or roasted unsalted almonds depending on your preference; roasting almonds prior to blending intensifies the nutty flavor.
  • If you prefer a thicker sauce, blend less; for a smoother sauce, blend longer.
