Description

These Easy Protein Rice Krispie Treats are a healthier twist on the classic dessert, packed with protein and perfect for a quick snack or post-workout bite.


Ingredients

  • 3 cups Rice Krispies cereal
  • 1/2 cup vanilla protein powder
  • 1/2 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Optional: 1/4 cup mini chocolate chips


Instructions

  1. Line an 8×8-inch baking pan with parchment paper and set aside.
  2. In a large mixing bowl, combine the Rice Krispies and protein powder.
  3. In a microwave-safe bowl, add the peanut butter and honey (or maple syrup). Microwave for 30-45 seconds until melted and smooth.
  4. Stir in the vanilla extract and salt into the melted mixture.
  5. Pour the wet mixture over the Rice Krispies and protein powder. Mix until well combined.
  6. Fold in the mini chocolate chips if using.
  7. Transfer the mixture into the prepared pan and press it down firmly using a spatula or your hands.
  8. Refrigerate for at least 1 hour or until set.
  9. Cut into bars and serve. Store leftovers in an airtight container in the fridge.

Notes

  • You can use any nut or seed butter in place of peanut butter.
  • Adjust sweetness by using more or less honey/maple syrup.
  • For a chocolate version, use chocolate protein powder.
