Description

These Easy Keto Cinnamon Rolls are a low-carb, grain-free treat perfect for those following a ketogenic diet. Made with almond and coconut flours, sweetened with Swerve, and packed with warm cinnamon flavor, these cinnamon rolls are soft, delicious, and ready in under 30 minutes.

Ingredients

Scale

Dough

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 2 teaspoons baking powder
  • 1/4 cup Swerve sweetener
  • 1/4 teaspoon salt
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1/4 cup unsweetened almond milk

Filling

  • 1 tablespoon cinnamon
  • 1/4 cup Swerve sweetener
  • 2 tablespoons butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, coconut flour, baking powder, 1/4 cup Swerve sweetener, and salt to create the dry base of the dough.
  3. Prepare Wet Ingredients: In a separate bowl, whisk together the melted butter, eggs, and unsweetened almond milk until smooth and well combined.
  4. Form the Dough: Pour the wet ingredients into the dry ingredients and mix thoroughly until a cohesive dough forms.
  5. Roll Out Dough: Place the dough on a piece of parchment paper and roll it out into a rectangular shape, ensuring even thickness for uniform baking.
  6. Make Filling: Melt the 2 tablespoons of butter and stir in the cinnamon and remaining 1/4 cup Swerve sweetener. Spread this mixture evenly over the rolled dough using the back of a spoon or a spatula.
  7. Shape Rolls: Starting from one end, roll the dough tightly into a log. Slice the log into 8 equal rolls and arrange them on the prepared baking sheet with some space between each.
  8. Bake: Place the baking sheet in the oven and bake for 15-18 minutes, or until the rolls turn golden brown on top.
  9. Cool and Serve: Allow the cinnamon rolls to cool slightly on the baking sheet before serving to let them set and enhance their flavor.

Notes

  • Make sure the butter for the dough is fully melted but not hot to avoid cooking the eggs prematurely.
  • Using parchment paper for rolling and baking prevents sticking and makes cleanup easier.
  • For a sweeter filling, you can adjust the amount of Swerve sweetener according to your taste.
  • These rolls are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the microwave or oven before serving for the best texture.
