Description
These Easy Ground Beef Enchiladas are a family favorite, featuring seasoned beef, melted cheese, and enchilada sauce wrapped in soft tortillas and baked to perfection.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning mix
- 1/4 cup water
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 2 cups enchilada sauce
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, cook ground beef until browned, about 5-7 minutes. Drain excess fat.
- Add chopped onion and garlic to the skillet and cook for 2-3 minutes until softened.
- Stir in taco seasoning and water. Simmer for 3-4 minutes until mixture thickens.
- Spread 1/2 cup enchilada sauce in the bottom of a 9×13 inch baking dish.
- Spoon about 1/4 cup of beef mixture into each tortilla, sprinkle with cheese, roll up, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the rolled tortillas and top with the rest of the cheese.
- Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
- Garnish with chopped cilantro if desired, and serve warm.
Notes
- You can use corn tortillas for a more traditional version.
- Substitute ground turkey or chicken for a lighter option.
- Top with sour cream, avocado, or jalapeños for added flavor.
