Description

These Easy Ground Beef Enchiladas are a family favorite, featuring seasoned beef, melted cheese, and enchilada sauce wrapped in soft tortillas and baked to perfection.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1/4 cup water
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups enchilada sauce
  • 1/4 cup chopped cilantro (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook ground beef until browned, about 5-7 minutes. Drain excess fat.
  3. Add chopped onion and garlic to the skillet and cook for 2-3 minutes until softened.
  4. Stir in taco seasoning and water. Simmer for 3-4 minutes until mixture thickens.
  5. Spread 1/2 cup enchilada sauce in the bottom of a 9×13 inch baking dish.
  6. Spoon about 1/4 cup of beef mixture into each tortilla, sprinkle with cheese, roll up, and place seam-side down in the dish.
  7. Pour remaining enchilada sauce over the rolled tortillas and top with the rest of the cheese.
  8. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  9. Garnish with chopped cilantro if desired, and serve warm.

Notes

  • You can use corn tortillas for a more traditional version.
  • Substitute ground turkey or chicken for a lighter option.
  • Top with sour cream, avocado, or jalapeños for added flavor.
