Ingredients
- 2 cups cooked chicken, shredded
- 1 cup long-grain white rice
- 1 can (4 oz) diced green chilies
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cumin
- Salt and pepper, to taste
- 1 tablespoon olive oil (optional for greasing the pan)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with olive oil or cooking spray.
- In a large mixing bowl, combine the shredded chicken, cooked rice, diced green chilies, cream of chicken soup, sour cream, milk, garlic powder, onion powder, cumin, and half of the shredded cheddar cheese.
- Season with salt and pepper to taste, then stir everything together until well combined.
- Transfer the mixture into the prepared baking dish, spreading it out evenly.
- Top with the remaining cheddar cheese.
- Cover with aluminum foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving.
Notes
- You can use rotisserie chicken to save time on preparation.
- If you prefer a spicier casserole, add more green chilies or some jalapeños.
- Feel free to substitute the cream of chicken soup with a gluten-free version if needed.
