Description

These Easy Greek Chicken Bowls are a healthy and flavorful meal made with marinated chicken, fresh vegetables, and a tangy tzatziki sauce, perfect for meal prep or a quick dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat. Cook the chicken for 5-7 minutes per side, or until cooked through. Let rest and then slice.
  3. Assemble bowls by adding a base of cooked quinoa or rice.
  4. Top with cherry tomatoes, cucumber, red onion, olives, and sliced chicken.
  5. Add a dollop of tzatziki sauce and sprinkle with feta cheese.
  6. Garnish with chopped parsley if desired and serve immediately.
