These Easy Glazed Lemon Cookies are soft, chewy, and bursting with fresh lemon flavor. Perfect for spring or summer treats, they’re topped with a simple sweet-tart lemon glaze.
Ingredients
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest (from about 1 large lemon)
- 2 tablespoons fresh lemon juice
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar (for glaze)
- 1 tablespoon fresh lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg, lemon zest, and lemon juice until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar and lemon juice until smooth to make the glaze.
- Drizzle the glaze over the cooled cookies. Let the glaze set before serving.
Notes
- For extra lemon flavor, add 1/4 teaspoon lemon extract to the dough.
- Cookies can be stored in an airtight container at room temperature for up to 5 days.
- Chill dough for 30 minutes if it’s too sticky to handle.
