Description

These Easy Glazed Lemon Cookies are soft, chewy, and bursting with fresh lemon flavor. Perfect for spring or summer treats, they’re topped with a simple sweet-tart lemon glaze.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest (from about 1 large lemon)
  • 2 tablespoons fresh lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon fresh lemon juice (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg, lemon zest, and lemon juice until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 10–12 minutes, or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. In a small bowl, whisk together the powdered sugar and lemon juice until smooth to make the glaze.
  9. Drizzle the glaze over the cooled cookies. Let the glaze set before serving.

Notes

  • For extra lemon flavor, add 1/4 teaspoon lemon extract to the dough.
  • Cookies can be stored in an airtight container at room temperature for up to 5 days.
  • Chill dough for 30 minutes if it’s too sticky to handle.
