Description

Ingredients

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the salmon fillets with salt and pepper. Place them in the skillet and cook for 4-5 minutes on each side, until cooked through. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Pour in the heavy cream and bring it to a simmer. Stir in the Parmesan cheese and cook until the sauce thickens, about 3-4 minutes.
  6. Return the cooked salmon to the skillet and spoon the creamy spinach sauce over the top. Cook for an additional 2 minutes to heat the salmon through.
  7. Finish with a squeeze of lemon juice and red pepper flakes, if desired.
  8. Serve warm with your choice of side dish.
