Ingredients
- 4 salmon fillets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the salmon fillets with salt and pepper. Place them in the skillet and cook for 4-5 minutes on each side, until cooked through. Remove the salmon from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
- Add the fresh spinach and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream and bring it to a simmer. Stir in the Parmesan cheese and cook until the sauce thickens, about 3-4 minutes.
- Return the cooked salmon to the skillet and spoon the creamy spinach sauce over the top. Cook for an additional 2 minutes to heat the salmon through.
- Finish with a squeeze of lemon juice and red pepper flakes, if desired.
- Serve warm with your choice of side dish.
Notes
- For a lower-calorie version, you can use half-and-half instead of heavy cream.
- Serve with rice, pasta, or a side of roasted vegetables for a complete meal.
- You can substitute the salmon with chicken or another type of fish if preferred.
