A refreshing and zesty coleslaw with a citrusy kick from lime and a fresh herb flavor from cilantro. Perfect for summer barbecues or as a side dish.
Ingredients
- 1 small head green cabbage, shredded
- 1 small head purple cabbage, shredded
- 1 large carrot, shredded
- 1/4 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 2 tablespoons fresh lime juice
- 1 tablespoon honey (optional)
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded green cabbage, purple cabbage, carrot, and cilantro.
- In a separate small bowl, whisk together the mayonnaise, lime juice, honey, apple cider vinegar, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture and toss to combine evenly.
- Taste and adjust seasoning, adding more salt, pepper, or lime juice as needed.
- Cover and refrigerate the coleslaw for at least 30 minutes before serving to let the flavors meld together.
Notes
- For extra crunch, you can add sliced radishes or jicama.
- This coleslaw can be made a day ahead for deeper flavor.
- If you prefer a creamier slaw, you can add more mayonnaise or substitute sour cream.
