Description

A refreshing and zesty coleslaw with a citrusy kick from lime and a fresh herb flavor from cilantro. Perfect for summer barbecues or as a side dish.


Ingredients

  • 1 small head green cabbage, shredded
  • 1 small head purple cabbage, shredded
  • 1 large carrot, shredded
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey (optional)
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the shredded green cabbage, purple cabbage, carrot, and cilantro.
  2. In a separate small bowl, whisk together the mayonnaise, lime juice, honey, apple cider vinegar, garlic powder, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss to combine evenly.
  4. Taste and adjust seasoning, adding more salt, pepper, or lime juice as needed.
  5. Cover and refrigerate the coleslaw for at least 30 minutes before serving to let the flavors meld together.

Notes

  • For extra crunch, you can add sliced radishes or jicama.
