This easy chuck roast recipe is hearty, flavorful, and perfect for a cozy dinner. It’s made with simple ingredients and cooked low and slow until it’s fall-apart tender. Great for beginners or anyone looking for a no-fuss comfort meal!
Ingredients

3-4 lb chuck roast

1 tablespoon olive oil

Salt and pepper, to taste

1 large onion, sliced

4 cloves garlic, minced

4 carrots, peeled and cut into chunks

3-4 potatoes, cut into chunks

2 cups beef broth
-
1 tablespoon Worcestershire sauce

1 teaspoon dried thyme
-
1 teaspoon dried rosemary
Instructions

Preheat oven to 300°F (150°C).

Season the chuck roast with salt and pepper on all sides.

In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the roast for about 4–5 minutes per side, until browned.

Remove the roast and set aside.

In the same pot, add onions and garlic. Cook for 2–3 minutes, until fragrant.

Add carrots and potatoes to the pot. Place the roast back on top of the vegetables.

Pour in beef broth and Worcestershire sauce. Sprinkle thyme and rosemary over the top.

Cover with a lid and place in the oven.

Cook for 3–3.5 hours, or until the roast is fork-tender.

Remove from the oven and let rest for 10 minutes before slicing or shredding. Serve with the vegetables and broth.
Notes

You can add celery or mushrooms for extra flavor.

If you prefer a thicker gravy, remove the roast and veggies, then simmer the remaining liquid on the stovetop and whisk in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).
