Easy Chicken Fajitas are a quick and flavorful dish featuring tender chicken strips, colorful bell peppers, and onions, all seasoned with a zesty blend of spices and served in soft tortillas.

- 2 chicken breasts, sliced into thin strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper, to taste
- 8 small flour tortillas
- Fresh cilantro, chopped (optional)
- Fresh lime wedges (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken strips and cook for 5-7 minutes, or until fully cooked and lightly browned. Remove from skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook for 3-4 minutes, stirring occasionally, until softened.
- Return the chicken to the skillet and sprinkle with chili powder, cumin, garlic powder, paprika, cayenne (if using), salt, and pepper. Stir to combine and cook for an additional 2-3 minutes.
- Warm the flour tortillas in a dry skillet or microwave.
- Serve the chicken and vegetable mixture on the warm tortillas, topped with fresh cilantro and a squeeze of lime juice, if desired.
Notes
- Feel free to add other toppings such as sour cream, guacamole, or shredded cheese.
- For a healthier version, use whole wheat tortillas or lettuce wraps instead of flour tortillas.
- Adjust the level of spice by modifying the amount of cayenne pepper or using a milder chili powder.
