Description

Easy Chicken Fajitas are a quick and flavorful dish featuring tender chicken strips, colorful bell peppers, and onions, all seasoned with a zesty blend of spices and served in soft tortillas.


Ingredients

  • 2 chicken breasts, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 8 small flour tortillas
  • Fresh cilantro, chopped (optional)
  • Fresh lime wedges (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken strips and cook for 5-7 minutes, or until fully cooked and lightly browned. Remove from skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Cook for 3-4 minutes, stirring occasionally, until softened.
  4. Return the chicken to the skillet and sprinkle with chili powder, cumin, garlic powder, paprika, cayenne (if using), salt, and pepper. Stir to combine and cook for an additional 2-3 minutes.
  5. Warm the flour tortillas in a dry skillet or microwave.
  6. Serve the chicken and vegetable mixture on the warm tortillas, topped with fresh cilantro and a squeeze of lime juice, if desired.

Notes

  • Feel free to add other toppings such as sour cream, guacamole, or shredded cheese.
  • For a healthier version, use whole wheat tortillas or lettuce wraps instead of flour tortillas.
  • Adjust the level of spice by modifying the amount of cayenne pepper or using a milder chili powder.
