Description

This Easy Bruschetta Chicken is a quick and flavorful dish featuring juicy chicken breasts topped with a fresh tomato and basil bruschetta mix. Perfect for a low-carb, high-protein dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub the chicken breasts with olive oil, Italian seasoning, salt, and pepper.
  3. Place the chicken in a baking dish and bake for 20–25 minutes, or until cooked through.
  4. While the chicken is baking, combine tomatoes, red onion, garlic, basil, and balsamic vinegar in a bowl. Mix well and set aside.
  5. Remove the chicken from the oven, top each piece with the bruschetta mixture, and sprinkle with mozzarella cheese if using.
  6. Return to oven for an additional 5 minutes, or until cheese is melted.
  7. Serve warm, garnished with extra basil if desired.
