- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
- 1/2 cup shredded mozzarella cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Rub the chicken breasts with olive oil, Italian seasoning, salt, and pepper.
- Place the chicken in a baking dish and bake for 20–25 minutes, or until cooked through.
- While the chicken is baking, combine tomatoes, red onion, garlic, basil, and balsamic vinegar in a bowl. Mix well and set aside.
- Remove the chicken from the oven, top each piece with the bruschetta mixture, and sprinkle with mozzarella cheese if using.
- Return to oven for an additional 5 minutes, or until cheese is melted.
- Serve warm, garnished with extra basil if desired.
