A quick and easy recipe for BBQ Chicken Tostadas, combining tender BBQ chicken with crispy tostada shells and topped with fresh veggies.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 4 tostada shells
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup corn kernels (fresh or frozen)
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream (optional)
  • 1 tablespoon olive oil (for tostada shells)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brush the tostada shells lightly with olive oil and place them on a baking sheet. Bake for 5-7 minutes or until they are crispy and golden.
  3. In a bowl, mix the shredded chicken with BBQ sauce until well coated.
  4. Once the tostada shells are baked, remove them from the oven and set them aside to cool slightly.
  5. Top each tostada shell with a layer of BBQ chicken, followed by shredded lettuce, diced tomatoes, red onions, and corn kernels.
