A quick and easy recipe for BBQ Chicken Tostadas, combining tender BBQ chicken with crispy tostada shells and topped with fresh veggies.
Ingredients
- 2 cups cooked shredded chicken
- 1/2 cup BBQ sauce
- 4 tostada shells
- 1/2 cup shredded lettuce
- 1/4 cup diced tomatoes
- 1/4 cup red onion, thinly sliced
- 1/4 cup corn kernels (fresh or frozen)
- 1/4 cup chopped cilantro
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream (optional)
- 1 tablespoon olive oil (for tostada shells)
Instructions
- Preheat your oven to 375°F (190°C).
- Brush the tostada shells lightly with olive oil and place them on a baking sheet. Bake for 5-7 minutes or until they are crispy and golden.
- In a bowl, mix the shredded chicken with BBQ sauce until well coated.
- Once the tostada shells are baked, remove them from the oven and set them aside to cool slightly.
- Top each tostada shell with a layer of BBQ chicken, followed by shredded lettuce, diced tomatoes, red onions, and corn kernels.
- Sprinkle shredded cheddar cheese and chopped cilantro on top of the toppings.
- Optionally, drizzle sour cream over the tostadas for added creaminess.
- Serve immediately and enjoy!

- You can substitute the chicken with pulled pork or beef for a different variation.
