- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cups sliced mushrooms (white or cremini)
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5-6 minutes on each side until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter and add mushrooms. Sauté for 5 minutes until they begin to brown.
- Add garlic and thyme, and cook for another 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping any browned bits from the pan.
- Stir in heavy cream and let the sauce simmer for 3-4 minutes until slightly thickened.
- Return chicken to the pan and spoon sauce over it. Simmer for another 2-3 minutes.
- Garnish with chopped parsley and serve hot.
Notes
- You can use chicken thighs instead of breasts for a juicier result.
- For a dairy-free option, substitute heavy cream with coconut milk.
- Serve with mashed potatoes, rice, or pasta for a complete meal.
