Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cups sliced mushrooms (white or cremini)
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5-6 minutes on each side until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and add mushrooms. Sauté for 5 minutes until they begin to brown.
  4. Add garlic and thyme, and cook for another 1-2 minutes until fragrant.
  5. Pour in the chicken broth and bring to a simmer, scraping any browned bits from the pan.
  6. Stir in heavy cream and let the sauce simmer for 3-4 minutes until slightly thickened.
  7. Return chicken to the pan and spoon sauce over it. Simmer for another 2-3 minutes.
  8. Garnish with chopped parsley and serve hot.

Notes

  • You can use chicken thighs instead of breasts for a juicier result.
  • For a dairy-free option, substitute heavy cream with coconut milk.
