Description

Festive and colorful Easter Egg Fruit Pizzas made with sugar cookie bases, cream cheese frosting, and topped with fresh fruit in fun designs.


Ingredients

  • 1 package refrigerated sugar cookie dough (16.5 oz)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup kiwi, peeled and sliced
  • 1/2 cup mandarin oranges
  • 1 tbsp lemon juice (optional, to prevent fruit browning)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Roll out the sugar cookie dough and cut into egg shapes using a cookie cutter.
  3. Place on a baking sheet and bake for 8-10 minutes, or until the edges are lightly golden. Let cool completely.
  4. In a bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  5. Spread the cream cheese mixture evenly over each cooled cookie.
  6. Decorate with assorted sliced fruits to resemble Easter eggs.
  7. Optionally, brush with lemon juice to prevent browning of fruits.
  8. Chill in the refrigerator for 15-20 minutes before serving.
