Easter Birds Nest Cookies are festive, no-bake treats made with chow mein noodles and chocolate, topped with candy eggs for a fun and easy spring dessert.

- 3 cups chow mein noodles
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- 1/2 cup peanut butter
- 1/2 teaspoon vanilla extract
- 1 cup candy-coated chocolate eggs (like Cadbury Mini Eggs)
Instructions
- Line a baking sheet with parchment paper.
- In a large microwave-safe bowl, combine chocolate chips, butterscotch chips, and peanut butter.
- Microwave in 30-second intervals, stirring after each, until the mixture is melted and smooth.
- Stir in the vanilla extract.
- Add chow mein noodles and gently mix until fully coated.
- Scoop about 2 tablespoons of the mixture onto the prepared baking sheet and shape into nests using the back of a spoon.
- Place 2–3 candy eggs in the center of each nest.
- Refrigerate for 30 minutes or until firm.
Notes
- You can substitute peanut butter with almond butter or sunflower seed butter for allergies.
- Decorate with jelly beans or other Easter candies if desired.
- Store in an airtight container in the fridge for up to a week.
