Description

Easter Birds Nest Cookies are festive, no-bake treats made with chow mein noodles and chocolate, topped with candy eggs for a fun and easy spring dessert.


Ingredients

  • 3 cups chow mein noodles
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • 1/2 cup peanut butter
  • 1/2 teaspoon vanilla extract
  • 1 cup candy-coated chocolate eggs (like Cadbury Mini Eggs)

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large microwave-safe bowl, combine chocolate chips, butterscotch chips, and peanut butter.
  3. Microwave in 30-second intervals, stirring after each, until the mixture is melted and smooth.
  4. Stir in the vanilla extract.
  5. Add chow mein noodles and gently mix until fully coated.
  6. Scoop about 2 tablespoons of the mixture onto the prepared baking sheet and shape into nests using the back of a spoon.
  7. Place 2–3 candy eggs in the center of each nest.
  8. Refrigerate for 30 minutes or until firm.

Notes

  • You can substitute peanut butter with almond butter or sunflower seed butter for allergies.
  • Decorate with jelly beans or other Easter candies if desired.
  • Store in an airtight container in the fridge for up to a week.
