Description

This easy Dump-and-Bake Chicken Tzatziki with Rice is a flavorful, Mediterranean-inspired dish that comes together with just a few simple ingredients. Everything bakes together in one dish — juicy chicken, creamy tzatziki sauce, and tender rice — making it perfect for busy weeknights. No need to pre-cook anything!


Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-size pieces)

  • 1 cup long grain white rice (uncooked)

  • 1 1/2 cups chicken broth

  • 1 cup tzatziki sauce (store-bought or homemade)

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 small red onion (thinly sliced)

  • 1 cup cherry tomatoes (halved)

  • 1/2 cup crumbled feta cheese

  • 2 tablespoons fresh parsley or dill (optional, for garnish)

  • Lemon wedges (optional, for serving)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Grease a 9×13-inch baking dish with olive oil or non-stick spray.

  3. Add uncooked rice to the bottom of the dish. Pour in the chicken broth and stir to combine.

  4. Layer the chicken pieces evenly over the rice. Sprinkle with garlic powder, oregano, salt, and pepper.

  5. Add sliced red onion and cherry tomatoes over the chicken.

  6. Dollop or drizzle tzatziki sauce over everything. Gently spread it out, but don’t stir.

  7. Cover the dish tightly with foil and bake for 40–45 minutes, or until the rice is tender and the chicken is fully cooked.

  8. Remove foil, sprinkle with feta cheese, and bake uncovered for 5–10 more minutes until cheese is slightly melted and golden.

  9. Garnish with fresh herbs and serve with lemon wedges if desired.


Notes

  • Use rotisserie chicken to speed things up — just adjust the cook time since you won’t need to cook the chicken through.

  • For more veggies, toss in spinach, zucchini, or chopped bell peppers.

  • Tzatziki can be swapped for plain Greek yogurt mixed with lemon juice, garlic, and cucumber.
