This easy Dump-and-Bake Chicken Tzatziki with Rice is a flavorful, Mediterranean-inspired dish that comes together with just a few simple ingredients. 1 lb boneless, skinless chicken breasts (cut into bite-size pieces)

1 cup long grain white rice (uncooked)

1 ½ cups chicken broth

1 cup tzatziki sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon salt

¼ teaspoon black pepper

1 small red onion (thinly sliced)

1 cup cherry tomatoes (halved)

½ cup crumbled feta cheese

2 tablespoons fresh parsley or dill (optional, for garnish)

Instructions

Preheat oven to 375°F (190°C).

Grease a 9×13-inch baking dish with olive oil or non-stick spray.

Add uncooked rice to the bottom of the dish. Pour in the chicken broth and stir to combine.

Layer the chicken pieces evenly over the rice. Sprinkle with garlic powder, oregano, salt, and pepper.

Add sliced red onion and cherry tomatoes over the chicken.

Dollop or drizzle tzatziki sauce over everything. Gently spread it out, but don’t stir.

Cover the dish tightly with foil and bake for 40–45 minutes, or until the rice is tender and the chicken is fully cooked.

Remove foil, sprinkle with feta cheese, and bake uncovered for 5–10 more minutes until cheese is slightly melted and golden.
