- 1 cup tzatziki sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- 1/2 cup shredded cucumber (optional for extra crunch)
- 1 tablespoon lemon juice
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large baking dish, layer the uncooked rice evenly at the bottom.
- Place the chicken breasts on top of the rice.
- In a small bowl, mix together tzatziki sauce, olive oil, garlic powder, oregano, salt, and pepper. Pour the mixture over the chicken breasts, ensuring they are coated well.
- Pour chicken broth over the rice, ensuring it’s evenly distributed.
- Cover the baking dish with aluminum foil and bake for 35-40 minutes or until the chicken is cooked through and the rice is tender.
- Remove from the oven, and let the dish rest for 5 minutes before serving.
- Optional: Garnish with fresh parsley and shredded cucumber for added flavor and texture.
Notes
- For extra flavor, you can marinate the chicken in the tzatziki sauce for 30 minutes before baking.
- You can use brown rice or cauliflower rice for a healthier or lower-carb alternative.
- If you like a bit of crispiness, broil the dish for an additional 3-5 minutes after baking.
