- 8 oz ramen noodles (or any stir-fry noodles)
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 large eggs
- 2 green onions, chopped
- Optional: cooked chicken, shrimp, or tofu
- Optional: sesame seeds for garnish
Instructions
- Cook the noodles according to package instructions, drain, and set aside.
- In a small bowl, mix soy sauce, brown sugar, sriracha, rice vinegar, and minced garlic to make the sauce.
- Heat vegetable oil in a skillet or wok over medium heat.
- Crack in the eggs and scramble until just set. Remove and set aside.
- In the same skillet, add the cooked noodles and pour in the sauce. Toss to coat evenly.
- Stir in the scrambled eggs and optional cooked protein, mixing well.
- Cook for another 1–2 minutes until heated through.
- Garnish with green onions and sesame seeds before serving.
Notes
- Use chili garlic sauce or gochujang for a different kind of heat.
- Add vegetables like bell peppers, carrots, or snap peas for extra nutrition.
- This dish is perfect for quick weeknight dinners.
