Description

This Dollywood Cinnamon Bread recipe features a soft, pull-apart bread with a buttery cinnamon-sugar coating and a sweet, creamy icing drizzle. Perfect for breakfast or dessert, this easy-to-make bread uses frozen dough and requires minimal preparation, delivering a delightful balance of warm spices and sweet glaze in every bite.

Ingredients

Scale

Bread and Butter

  • 1 lb frozen bread dough, thawed
  • 4 Tbsp unsalted butter, melted

Cinnamon Sugar Coating

  • 1 Tbsp cinnamon
  • 1/4 cup granulated sugar (for cinnamon mixture)
  • 1/4 cup brown sugar (sprinkled on top)

Icing

  • 1 cup powdered sugar
  • 2–3 Tbsp milk

Instructions

  1. Prepare the Pan for Baking: Lightly spray a loaf pan with cooking spray, then line it with parchment paper. Spray the parchment paper inside to keep it in place and prevent sticking.
  2. Prepare the Dough: Place the frozen bread dough loaf in the parchment-lined pan and thaw according to package instructions, typically 4–7 hours, until fully softened but not yet risen.
  3. Mix Sugar and Cinnamon: In a shallow dish, combine 1/4 cup granulated sugar with 1 tablespoon cinnamon to create the cinnamon-sugar coating. Set aside.
  4. Cut the Dough: Using a knife, make 5–6 horizontal slits across the top of the dough about halfway through its depth to allow for easy pulling apart after baking.
  5. Coat in Butter and Cinnamon Sugar: Generously brush melted butter over the top and into the slits of the dough. Sprinkle the cinnamon-sugar mixture evenly over the dough, ensuring to get plenty inside the slits for flavor.
  6. Top and Let Rise: Place the loaf pan in a warm area and let the dough rise for 30 minutes until slightly puffed. Then, sprinkle 1/4 cup brown sugar evenly over the top.
  7. Preheat the Oven: While the dough is rising, preheat the oven to 350°F (175°C) to prepare for baking.
  8. Bake: Bake the risen loaf in the preheated oven for 20–25 minutes, or until fully baked through and golden brown on top.
  9. Prepare the Icing: While the bread bakes, whisk together powdered sugar and 2–3 tablespoons of milk in a small bowl until smooth, adjusting milk to achieve desired icing consistency.
  10. Finish and Serve: Remove the bread from the oven and let cool slightly. Drizzle the icing generously over the warm bread. Serve by pulling apart pieces for a delicious, shareable treat.

Notes

  • Use thawed bread dough according to package for best results.
  • The slits allow the bread to pull apart easily and absorb the cinnamon sugar for flavor.
  • Adjust milk in icing to your preferred thickness.
  • Ensure the dough is only thawed and slightly risen before baking, not over-proofed.
  • Serve warm for the best taste and texture.
