Description

These Delicious Freezer Breakfast Burritos are perfect for busy mornings, combining crispy tater tots, savory breakfast sausage, fluffy eggs, creamy refried beans, and melty cheese wrapped in warm flour tortillas. Easy to make ahead and freeze, they save time without sacrificing flavor or satisfaction.

Ingredients

Scale

Main Ingredients

  • 1 pound Frozen Tater Tots
  • 1 tablespoon Olive Oil
  • 1 pound Breakfast Sausage
  • 6 large Eggs
  • 1/2 cup Half and Half
  • To taste Kosher Salt
  • To taste Freshly Ground Black Pepper
  • 1 can Refried Beans
  • 4 large Flour Tortillas
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 1 cup Roma Tomatoes, diced
  • 1/4 cup Chopped Fresh Cilantro Leaves

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and lightly oil a baking sheet to prevent sticking during baking.
  2. Cook Tater Tots: Cook the frozen tater tots according to the package instructions until they are crispy and golden brown, which usually takes about 20 minutes. Once done, set them aside to cool slightly.
  3. Brown the Sausage: Heat olive oil in a skillet over medium-high heat. Add the breakfast sausage and cook it until it is evenly browned, which should take about 3 to 5 minutes. Break it up into small pieces as it cooks.
  4. Cook the Eggs: Whisk the eggs in a bowl, then pour them into the skillet with the cooked sausage. Cook the mixture until the eggs are just set. Stir in the half and half and continue cooking until the eggs thicken slightly. Season with kosher salt and freshly ground black pepper to taste.
  5. Assemble Burritos: Lay out each flour tortilla and spread a layer of refried beans down the center. Layer with crispy tater tots, sausage and egg mixture, shredded cheddar and Monterey Jack cheeses, diced tomatoes, and fresh cilantro.
  6. Fold Burritos: Fold each tortilla burrito-style by tucking in the sides and rolling it up tightly. Place each burrito seam-side down on the prepared baking sheet to seal them.
  7. Bake Burritos: Bake the assembled burritos in the preheated oven for 12 to 15 minutes until they are heated through and the tortillas are slightly golden and crisp on the outside.
  8. Serve or Freeze: Serve the burritos immediately for a hot breakfast, or let them cool completely before wrapping airtight to freeze for later use.

Notes

  • You can substitute frozen tater tots with diced roasted potatoes for a different texture.
  • Use turkey sausage as a lighter alternative to traditional breakfast sausage.
  • Whole wheat tortillas are a healthier substitute for regular flour tortillas.
  • Replace refried beans with black beans to change up the flavor profile.
  • If desired, omit tomatoes for a less complicated burrito.
  • Cool burritos completely before freezing to prevent sogginess.
  • Reheat frozen burritos in the oven or microwave until heated through.
