Description

This classic Cobb Salad is packed with fresh ingredients like crisp romaine, juicy tomatoes, creamy avocado, grilled chicken, and crumbled bacon. Topped with hard-boiled eggs and blue cheese, it’s a hearty and satisfying meal that’s great for lunch or dinner.


Ingredients

  • 6 cups romaine lettuce, chopped

  • 2 cups cooked chicken breast, diced (grilled or rotisserie)

  • 4 slices bacon, cooked and crumbled

  • 2 hard-boiled eggs, peeled and sliced

  • 1 avocado, sliced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup blue cheese crumbles

  • 1/4 cup green onions, sliced

  • Salt and pepper, to taste

  • Your favorite dressing (ranch, blue cheese, or red wine vinaigrette)


Instructions

  • Cook the bacon in a skillet until crispy. Drain on paper towels and crumble once cooled.

  • Hard boil the eggs, then peel and slice them.

  • If using raw chicken, grill or pan-cook until fully done, then let cool and dice.

  • Wash and chop the romaine lettuce. Place it in a large bowl or arrange on a platter.

  • Arrange the chicken, bacon, eggs, avocado, cherry tomatoes, blue cheese, and green onions on top of the lettuce in neat rows.

  • Sprinkle with salt and pepper to taste.

 

  • Drizzle your choice of dressing over the salad right before serving or serve it on the side.


Notes

  • You can swap the blue cheese for feta if you prefer a milder flavor.

  • For a vegetarian version, skip the bacon and chicken and add chickpeas or tofu.

  • Prepping the ingredients ahead of time makes this salad great for meal prep.
