- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 pound carrots, peeled and sliced
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in garlic, ginger, and curry powder, and cook for another minute.
- Add the carrots and vegetable broth, bring to a boil.
- Reduce heat and simmer for about 20 minutes, or until carrots are tender.
- Blend the soup using an immersion blender or in batches in a countertop blender until smooth.
- Stir in coconut milk and season with salt and pepper to taste.
- Heat through, then serve garnished with fresh cilantro if desired.
Notes
- For a spicier soup, add a pinch of cayenne pepper.
- Use light coconut milk for a lower calorie option.
- Soup can be frozen for up to 3 months.
