Description

Refreshing and light cucumber tea sandwiches, perfect for afternoon tea or a light snack.


Ingredients

  • 1 cucumber, thinly sliced
  • 8 slices white bread, crusts removed
  • 4 oz cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix the cream cheese, mayonnaise, lemon juice, dill, salt, and pepper until smooth.
  2. Spread a thin layer of the cream cheese mixture onto each slice of bread.
  3. Layer cucumber slices on half of the bread slices.
  4. Top with the remaining slices of bread to form sandwiches.
  5. Gently press down and slice each sandwich into quarters or halves as desired.
  6. Serve immediately or refrigerate until ready to serve.

Notes

  • Use English cucumbers for fewer seeds and thinner skin.
  • Pat cucumber slices dry to avoid soggy sandwiches.
  • Sandwiches are best served the same day.
