Refreshing and light cucumber tea sandwiches, perfect for afternoon tea or a light snack.

- 1 cucumber, thinly sliced
- 8 slices white bread, crusts removed
- 4 oz cream cheese, softened
- 2 tbsp mayonnaise
- 1 tsp lemon juice
- 1 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a small bowl, mix the cream cheese, mayonnaise, lemon juice, dill, salt, and pepper until smooth.
- Spread a thin layer of the cream cheese mixture onto each slice of bread.
- Layer cucumber slices on half of the bread slices.
- Top with the remaining slices of bread to form sandwiches.
- Gently press down and slice each sandwich into quarters or halves as desired.
- Serve immediately or refrigerate until ready to serve.
Notes
- Use English cucumbers for fewer seeds and thinner skin.
- Pat cucumber slices dry to avoid soggy sandwiches.
- Sandwiches are best served the same day.
