Description

A light, refreshing salad featuring crisp cucumbers, tangy feta cheese, and a zesty lemon-herb dressing—perfect for warm days or as a vibrant side dish.


Ingredients

  • 2 medium cucumbers, thinly sliced
  • 1 cup cherry tomatoes, halved (optional)
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh dill, chopped (or 1 tsp dried dill)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice (about 1/2 lemon)
  • 1 teaspoon red wine vinegar
  • Salt and black pepper, to taste


Instructions

  1. In a large bowl, combine sliced cucumbers, cherry tomatoes (if using), and red onion slices.
  2. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, chopped dill, salt, and pepper.
  3. Pour dressing over the vegetables and toss gently to coat.
  4. Sprinkle crumbled feta over the top and give a final light toss.
  5. Let the salad sit for 5–10 minutes at room temperature to allow flavors to meld.
  6. Serve immediately or chill for 15–20 minutes before serving for a cooler dish.

Notes

  • You can substitute dill with fresh mint or parsley for a different flavor.
  • Cherry or grape tomatoes add color and sweetness but are optional.
  • For extra crunch, add toasted pine nuts or sunflower seeds.
