Ingredients
- 2 medium cucumbers, thinly sliced
- 1 cup cherry tomatoes, halved (optional)
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh dill, chopped (or 1 tsp dried dill)
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice (about 1/2 lemon)
- 1 teaspoon red wine vinegar
- Salt and black pepper, to taste
Instructions
- In a large bowl, combine sliced cucumbers, cherry tomatoes (if using), and red onion slices.
- In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, chopped dill, salt, and pepper.
- Pour dressing over the vegetables and toss gently to coat.
- Sprinkle crumbled feta over the top and give a final light toss.
- Let the salad sit for 5–10 minutes at room temperature to allow flavors to meld.
- Serve immediately or chill for 15–20 minutes before serving for a cooler dish.
Notes
- You can substitute dill with fresh mint or parsley for a different flavor.
- Cherry or grape tomatoes add color and sweetness but are optional.
