Description

A refreshing twist on the classic Caprese salad, combining crisp cucumbers with juicy tomatoes, creamy mozzarella, and fresh basil, dressed with olive oil and balsamic glaze.


Ingredients

  • 1 large cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the cucumber slices, halved cherry tomatoes, and mozzarella balls.
  2. Tear the basil leaves and add them to the bowl.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Gently toss everything together until well coated.
  5. Transfer to a serving platter and drizzle with balsamic glaze before serving.

  • Use English cucumbers for fewer seeds and a crisper texture.
