A refreshing twist on the classic Caprese salad, combining crisp cucumbers with juicy tomatoes, creamy mozzarella, and fresh basil, dressed with olive oil and balsamic glaze.
Ingredients
- 1 large cucumber, sliced
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella balls (bocconcini), halved
- 1/4 cup fresh basil leaves
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cucumber slices, halved cherry tomatoes, and mozzarella balls.
- Tear the basil leaves and add them to the bowl.
- Drizzle with olive oil and season with salt and pepper.
- Gently toss everything together until well coated.
- Transfer to a serving platter and drizzle with balsamic glaze before serving.
Notes
- Use English cucumbers for fewer seeds and a crisper texture.
- For extra flavor, add a pinch of Italian seasoning.
- Best served fresh, but can be refrigerated for up to 2 hours before serving.
