Ingredients
- 2 cucumbers, thinly sliced
- 2 bell peppers (any color), diced
- 1/4 red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large bowl, combine the sliced cucumbers, diced bell peppers, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the vegetables and toss to coat evenly.
- Sprinkle with chopped parsley and gently mix.
- Chill in the refrigerator for 15–20 minutes before serving for best flavor.
