Ingredients

1 lb (about 4 cups) fresh strawberries, hulled and halved

2 tablespoons cornstarch

1 tablespoon lemon juice

1 (3 oz) package strawberry-flavored gelatin

Instructions

Wash, hull, and halve the strawberries. Set aside.

In a medium saucepan, combine the sugar and cornstarch. Stir in the cold water and lemon juice.

Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear (about 5–7 minutes).

Remove from heat and stir in the strawberry gelatin and vanilla extract until fully dissolved.

Let the mixture cool for 10–15 minutes.

Arrange the strawberries in a pie dish or a shallow serving dish.
