Description

This crustless fresh strawberry pie is a light and refreshing dessert that’s bursting with sweet strawberries. With no crust to fuss over, it’s easy to make and perfect for spring and summer gatherings. Serve chilled for a cool treat that everyone will love!


Ingredients

  • 1 lb (about 4 cups) fresh strawberries, hulled and halved

  • 3/4 cup granulated sugar

  • 2 tablespoons cornstarch

  • 1/4 cup cold water

  • 1 tablespoon lemon juice

  • 1/2 teaspoon vanilla extract

  • 1 (3 oz) package strawberry-flavored gelatin

 

  • Optional: whipped cream, for serving


Instructions

  1. Wash, hull, and halve the strawberries. Set aside.

  2. In a medium saucepan, combine the sugar and cornstarch. Stir in the cold water and lemon juice.

  3. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear (about 5–7 minutes).

  4. Remove from heat and stir in the strawberry gelatin and vanilla extract until fully dissolved.

  5. Let the mixture cool for 10–15 minutes.

  6. Arrange the strawberries in a pie dish or a shallow serving dish.

  7. Pour the gelatin mixture evenly over the strawberries.

  8. Refrigerate for at least 4 hours, or until fully set.

  9. Serve chilled, topped with whipped cream if desired.


Notes

  • You can slice the strawberries instead of halving them for a more uniform texture.

  • For a sugar-free version, use a sugar substitute and sugar-free gelatin.
