Chickpeas and Seasoning
- 1 (15 oz) can chickpeas, drained and rinsed
- 2 teaspoons olive oil
- 3/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika (optional)
- 1/2 teaspoon salt
Salad Mix
- 3–4 cups chopped romaine lettuce (1 large head or 2 smaller heads)
- 1/2 cup Caesar dressing
- 1/2 cup freshly shredded or shaved Parmesan cheese
- 1 cup croutons
Wrap Assembly
- 1 ripe avocado, mashed with a fork (optional)
- 2–3 large wraps (tortillas)
Instructions
- Prepare Spiced Chickpeas: Rinse and drain the chickpeas well and pat them dry using a kitchen towel. Heat the olive oil in a skillet over medium heat. Add the chickpeas along with paprika, garlic powder, onion powder, smoked paprika (if using), and salt. Cook them, stirring frequently, until the chickpeas are crispy and golden, about 5 minutes.
- Make Caesar Salad Mix: In a large bowl, toss the chopped romaine lettuce with the Caesar dressing until evenly coated. Add the shredded Parmesan cheese and croutons, then mix gently to combine all ingredients well.
- Assemble Wraps: Lay a wrap flat and spread a layer of mashed avocado (if using) over it. Top with a generous portion of the crispy chickpeas and then add the Caesar salad mixture on top. Roll the wrap tightly to enclose the filling. For a warm, sealed wrap, heat a pan over medium heat and lightly toast the wrap seam side down for 1–2 minutes. Cut the wraps in half and serve immediately.
