Description

Crockpot Taco Spaghetti is a flavorful and easy slow-cooked dish that combines taco-seasoned beef, pasta, cheese, and tomatoes for a fun twist on traditional spaghetti. A perfect weeknight meal the whole family will love.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning mix (or 2 tablespoons homemade)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 8 oz uncooked spaghetti
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. In a skillet over medium heat, cook the ground beef and chopped onion until browned. Drain excess fat.
  2. Transfer the cooked beef and onion to the crockpot.
  3. Add taco seasoning, diced tomatoes with green chilies, tomato sauce, beef broth, garlic powder, cumin, salt, and pepper. Stir to combine.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  5. Break spaghetti noodles in half and stir them into the crockpot. Make sure they are submerged in liquid.
  6. Cover and cook on high for an additional 20-30 minutes, or until the pasta is tender.
  7. Sprinkle shredded cheddar cheese over the top, cover, and cook for another 5 minutes, until the cheese melts.
  8. Serve hot, garnished with cilantro or green onions if desired.

Notes

  • For a spicier version, use hot diced tomatoes or add jalapeños.
  • You can use ground turkey or chicken instead of beef.
  • Add black beans or corn for extra texture and nutrition.
