- 1 lb ground beef
- 1 small onion, chopped
- 1 packet taco seasoning mix (or 2 tablespoons homemade)
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 8 oz uncooked spaghetti
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish (optional)
Instructions
- In a skillet over medium heat, cook the ground beef and chopped onion until browned. Drain excess fat.
- Transfer the cooked beef and onion to the crockpot.
- Add taco seasoning, diced tomatoes with green chilies, tomato sauce, beef broth, garlic powder, cumin, salt, and pepper. Stir to combine.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Break spaghetti noodles in half and stir them into the crockpot. Make sure they are submerged in liquid.
- Cover and cook on high for an additional 20-30 minutes, or until the pasta is tender.
- Sprinkle shredded cheddar cheese over the top, cover, and cook for another 5 minutes, until the cheese melts.
- Serve hot, garnished with cilantro or green onions if desired.
Notes
- For a spicier version, use hot diced tomatoes or add jalapeños.
- You can use ground turkey or chicken instead of beef.
- Add black beans or corn for extra texture and nutrition.
